The taralli

Fourteen savoury flavours and four sweet ones. The savoury range runs from the plain ones with extra virgin olive oil to the unexpected — turnip tops, turmeric and chia, celline olives and capers; the sweet ones are chocolate with almond, coconut or fig. They are the snack that replaces crisps in Puglia: they sit in the cupboard and get opened when someone drops by.

The frise

Bread baked twice, which keeps for months and is dipped for a second before being dressed. Wheat frise are pale and mild, barley ones darker and tastier, and then there are spelt, multigrain, wholemeal and the old wheats — Triminia, senatore cappelli. Friselline are the small version, for the aperitivo, served with a pâté or a spread on top.

The pasta

Semolina orecchiette, the shape that holds turnip tops and thick sauces, and the other durum wheat shapes drawn through bronze: the rough surface is what makes the sauce stick.

The sweet baking

Almond pastries, biscotti della salute, mustaccioli in chocolate and pitteddhe filled with quince paste, figs or grapes: these are the sweets of Salento's feast days, the ones made at home while the oven was still hot.

Keeping them

Anything dry — taralli, frise, pasta — keeps for months in a cupboard, away from damp. Once a pack is open, close it well: damp softens them, and five minutes in the oven at 150°C puts it right.
