The sweet taralli

They have the shape of savoury taralli but a different dough, with wine in it. The glazed ones are covered in a white sugar crust, and that is the version everyone recognises; those with primitivo wine are darker and less sweet; those with vincotto carry the deep taste of cooked must. The chocolate versions — with almond, coconut or fig — are the newest and the most indulgent.

The almond pastry

Almond pastries are the sweet for occasions: almond paste and sugar, soft inside, barely baked. Biscotti della salute are dry and barely sweet, made for dunking in milk or wine. Mustaccioli — mustaccere in dialect — are the dark biscuits covered in chocolate that Salento bakes for its patron saint festivals: hard-looking, soft inside.

The pitteddhe

Shortcrust closed over a filling of quince, fig or grape. They are the sweets of family feasts and keep for weeks: they were made to be prepared in advance.

Why they last

They are dry sweets: little water in the dough, no cream, no custard. That is why home baking in Puglia is nearly all like this — it was done while the oven was already hot, and it had to last for days. Keep them in a closed tin, away from damp. If they soften, five minutes in a warm oven brings them back.
