White wine taralli are the more delicate version of Apulian sweet taralli, also known as *tarallucci olio e vino* (oil-and-wine tarallucci). They come from a simple dough — flour, olive oil, sugar and white wine — baked until it reaches that crumbly texture that makes them recognisable at first bite.

It's the white wine that makes the difference: it gives the taralli a delicate taste, without covering the fragrance of the dough. They're made by Biscottificio Preite, the artisan bakery that has carried on Salento's sweet-making tradition for years.

In Apulian tradition, wine taralli come in many variants: some savoury, some sweet; some made with white wine, like these, some with red wine. White wine gives a more delicate flavour, less intense than red wine — which is why, among the Preite sweet taralli, these remain the lightest choice.
