Three families, three uses

At the table: flat plates, soup plates, bowls and beakers, in the three traditional finishes — the hand-painted rooster, the most recognisable decoration in Apulian pottery; the green speckled glaze; and natural brown, glazed clay with no decoration. And the sponza frise, the wide shallow bowl made for dipping friselle. On the flame: pans, the pignata — the round-bellied pot in which Salento cooks its pulses — the bean pot, the potato cooker, the tajine, the baking dish. Terracotta heats slowly and holds the heat: that is why soups cooked in it taste different. Around the house: the pumi, the bud-shaped good-luck ornaments that Grottaglie puts on balconies and at the corners of beds, along with jars, ceramic balloons, figures of countrywomen and kings' heads.

The first time you use a terracotta pot

Before it ever sees the flame, soak it in cold water for twelve hours: the clay drinks and will not crack while cooking. Then keep the flame low, always, and never go straight from hot to cold — no boiling pot under the tap. Wash it by hand, with as little soap as possible: terracotta is porous and absorbs it.

Why every piece is different

The glaze shifts from one firing to the next, no rooster is ever painted twice the same way, the sizes vary by a few millimetres. These are not faults: if two plates were identical, a mould would have made them.
