The tajine is a terracotta pot for steam cooking, and its strength is bringing out the very best in dishes and spices. The secret is its cone-shaped lid: the steam from cooking stays inside the pot, so the food cooks in its own moisture without drying out. Terracotta is ideal for natural cooking, keeping the original flavours of the ingredients intact, perfect for long, gentle cooking, and it brings a beauty that never goes out of fashion to the table along with the dish. It is made to last: dishwasher safe, with lead-free glazes.

It is made by Fratelli Colì in Cutrofiano, in the province of Lecce in Puglia, where terracotta and majolica have been crafted by hand since 1650. A quality handed down from father to son, from generation to generation, with a passion that has stayed the same, producing tableware and baking dishes known for their old-world charm, quality and durability.

⚠️ Important, first time only: before using it, soak the tajine in water for 12 hours. This is what gives it a long life.

Avoid sudden changes in temperature: don't put it down hot on a wet surface and don't put it under cold running water while it is hot.

For its pots and baking dishes the maker has chosen glazes free of heavy metals, so lead-free: this is what the «Long-life baking dishes» mark stands for. Ongoing research and technical updates improve their resistance to heat sources and reduce the absorption of odours. The symbols on the maker's label show dishwasher, microwave, oven, electric hob and gas hob.

The maker's MAR (High-Resistance Majolica) mark certifies more than twice the resistance of ordinary ceramics: tableware that is dishwasher safe, non-toxic and microwave safe. After many 16-hour wash cycles at 78 degrees with harsh detergents there was no loss of shine; in impact tests with a 50-gram ball it withstood drops from the maximum height of 90 cm, while ordinary clay showed cracks in the glaze at 50 cm and broke at 65 cm.

Fratelli Colì has obtained ISO 14001 certification for its environmental management system: a guarantee that the environmental aspects of its work are kept under control and comply with the law.

What is the conical lid for?

It keeps the steam from cooking inside the pot: the food cooks in its own moisture without drying out, and the spices stay sealed in with their aromas.

Which size should I choose?

There are two sizes: 26 cm across the mouth, 17 cm high with the lid, and 32 cm across the mouth, 22 cm high with the lid.

How do I use it the first time?

Before the first use only, soak it in water for 12 hours.

Is it dishwasher safe?

Yes. The maker's MAR mark certifies that its tableware withstands wash cycles without losing its shine. After washing, let it dry upside down before putting it away.
