La Rustica is the artisan Puglian tomato sauce in the 680 g format: the choice for those who really use it. Same tomatoes grown on our farm in open fields, same hand-picking in July and August, same artisan processing on the same day. No salt, no additives, pasteurised. Just tomato. An artisan tomato sauce the way it used to be made.
The only difference from the small format is quantity: more tomato per bottle, fewer changes and fewer caps to open. Ideal for large families, frequent cooks or those who like to stock up.
Sauce or passée?
They are the same thing: here is why
In everyday use tomato sauce and passée are used interchangeably, and that is fine. The technical distinction is subtle: passée is fresh tomato that has been passed and nothing more, without additional cooking. Sauce involves cooking with other ingredients. What you find here is fresh tomato, passed, and nothing more: call it what you like, the result in the pan is the same.
What matters is starting with a good tomato. Ours comes from a Puglian variety grown in open fields, harvested at ripeness and processed fresh. No pre-cooking, no salt, no additives. Pasteurised for food safety.
Properties
Lycopene: why cooked passée is good for you
Tomatoes are naturally rich in lycopene, a precious antioxidant that protects cells from ageing and reduces the risk of certain cardiovascular and tumour-related diseases. Not everyone knows that lycopene is released in much greater quantities during cooking compared to raw tomato: cooked passée is richer in lycopene than fresh tomatoes.
Adding a drizzle of extra virgin olive oil further enhances lycopene absorption: it is a fat-soluble molecule, better absorbed in the presence of good fats. So the classic Puglian sauce — passée, EVO oil, basil — is not just delicious: it is also one of the most nutritious preparations there is.

What is the difference between this format and the 420 g?
The same product in different quantities. The 680 g is the large format, ideal for large families or frequent cooks. The 420 g is the small format, more practical for first-time tasting or lower consumption.
Why buy in multiples of 12?
Because only with packs of 12 can we use the specially designed anti-break polystyrene boxes. Below 12 units protective packaging cannot be guaranteed.
Does it contain salt or additives?
No. The passée contains only fresh Puglian tomatoes processed artisanally and pasteurised. No added salt, no additives, no artificial preservatives.
How is it cooked?
No long cooking required. For a quick sauce 10 minutes is enough. It also works for slow cooking in braised dishes. The quality of the tomato makes the difference on its own.
Are the tomatoes from your farm?
Yes. Grown on our farm in open fields, planted in April-May and hand-picked in July and August.
