Puglian Yellow Tomato Passée

Puglian yellow tomato in a bottle: sweet, delicate, with an intense golden colour. No aggressive acidity. Perfect for pasta, fish and seafood.

Puglian yellow tomatoPasteurisedTwist-off cap — no additives

The yellow tomato passée is something different from what you know. Puglian yellow tomato has a completely different profile from red: sweeter, less acidic, with a delicate aroma that does not overpower other ingredients. The colour is an intense golden yellow — and visually it changes the dish too.

Made from yellow tomatoes grown and processed in Puglia, the passée is produced artisanally, pasteurised and sealed with a twist-off cap for practical storage. No additives, no artificial preservatives. A product suitable for everyone: it is naturally vegan.

Why it is different

Yellow vs red: it is not just the colour

Red tomato passée has a pronounced acidity that can cover delicate flavours — which is why it is almost never used on quality fish or seafood. Yellow tomato works differently: its natural sweetness marries with subtle flavours without overpowering them. The result is a rounder sauce that brings flavour without bringing acidity.

This makes it the natural choice for fish and seafood, but also for those who prefer a less aggressive tomato pasta. The golden colour is a visual element that immediately sets the dish apart.

Pairings and uses

🐟
Fish and seafood
The most natural pairing for yellow tomato. Sea bream, bass, prawns, langoustines: the yellow passée does not cover the taste of the sea, it enhances it.
🍝
Gourmet pasta
A yellow tomato pasta with lemon zest and fresh basil is a dish with character. The sweetness of the passée also works with ricotta or burrata.
🥫
Bruschetta and crostini
On toasted bread with EVO oil and wild oregano. The golden colour and sweet flavour create a bruschetta that surprises anyone tasting it for the first time.
🍲
Soups and veloutes
At the base of a summer vegetable veloute or pulse soup. The sweetness of the yellow tomato balances the bitterness of pulses.
💡 Yellow tomato is more delicate than red: do not cook it too long. Short cooking times preserve the sweetness and golden colour. For fish sauces, add the passée towards the end of cooking.
