If you are here, it is because you love the food of Puglia. Along the roughly 400 kilometres between Foggia and Lecce there are farmers, pasta makers and craftspeople who still work the way they used to. Here you will find some of their specialities and, above all, how to bring them to the table.

Frise, with tomato

A frisa is twice-baked bread: you dip it in water for a moment and dress it with fresh tomatoes, extra virgin olive oil, oregano and a pinch of salt. It is a starter or a meal in itself, especially in summer. To soak it without breaking it there is the sponza frise; frise and friselline are under frise and friselle.

Orecchiette with cime di rapa

It is the most famous recipe from Puglia: orecchiette and cime di rapa (turnip greens), with oil, garlic and chilli. With semolina orecchiette and cime di rapa cream you can make it out of season too; the cream is also good on bruschetta or with fish. Or there is the recipe box, with the ingredients ready to go.

Lampascioni

They are small bulbs with a slightly bitter taste, much loved in Puglia. In winter they arrive fresh, to be blanched and browned in oil; all year round you will find them in oil, ready for the antipasto.

Sun-dried tomatoes

Dried in the sun and preserved in oil, they are a seasoning that works in many recipes: on pasta, on a frisa, on bread. Try the sun-dried tomatoes in oil, the dried cherry tomatoes or the sun-dried tomato pâté.

Passata and sauces

For the Sunday sauce you need a good passata or good peeled tomatoes. Our passata and sauces come from small producers: stock up your pantry.

Capocollo from Martina Franca

It is served thinly sliced, on a board with rustic bread and cheeses from Puglia: capocollo from Martina Franca.

Vincotto

Grape vincotto, cuettu, is poured over desserts, ice cream and fruit. There is also fig vincotto.
