Which cultivar

Coratina is the olive of northern Puglia: a green oil, bitter and peppery, high in polyphenols. It is the one you taste on bruschetta and on bitter greens; to anyone not used to it, it seems "strong" — and that is exactly its character. Leccino gives a gentler, rounder oil, good on fish, salads and light dishes. Favolosa — a recent cultivar, bred to resist the olive tree diseases — sits in between: medium fruitiness, almond notes, pleasant on everything.

DOP, IGP and organic

DOP Terra d'Otranto guarantees that the olives come from that precise area and that the oil was made to the rules of the designation. IGP Olio di Puglia widens the boundary to the whole region. Organic refers instead to how the grove is farmed, not to where it is. They are three different things, and one oil can carry all three.

Keeping it

Oil fears three things: light, air and heat. Keep it closed, in the dark, away from the stove, and use it within a year or so of harvest — unlike wine, it does not improve with age. That is why the 5-litre tin and the bag-in-box are the best formats for a household: no light gets in and, in the bag-in-box, no air either. From there you decant into a small bottle for the kitchen.

The flavoured oils

Orange, lemon, garlic, chilli: these are pressed from the whole fruit together with the olives, not flavoured afterwards. Use them raw, at the end, and a few drops are enough.
