The low terracotta pan is made for long, gentle cooking: natural cooking that keeps the original flavours of the ingredients. It is versatile — it goes in the oven and on the hob — and made to last: dishwasher safe, with lead-free glazes. And it brings a beauty to the table along with the dish, proof that terracotta never goes out of style.

It is made by Fratelli Colì in Cutrofiano, in the province of Lecce in Puglia, where terracotta and majolica have been crafted by hand since 1650: a tradition handed down from father to son, producing tableware known for its old-world charm, quality and durability. This page is for the low version; the shop also has the tall terracotta pan by the same maker.

⚠️ Important, first time only: before using it, soak the pan in water for 12 hours. This is what gives it a long life.

Avoid thermal shock: don't set it down hot on a wet surface and don't put it under cold running water while hot.

Fine cracks in the glaze are typical of terracotta and do not affect its use.

Made to last

For its baking dishes the maker uses glazes free of heavy metals, so lead-free; the label reads «pottery for food, made in Italy». Ongoing technical updates improve heat resistance and reduce the absorption of odours.

The MAR (High-Resistance Majolica) mark certifies greater resistance than ordinary ceramics: the tests carried out for the mark show that this tableware withstands knocks and frequent washing without losing its shine.

Fratelli Colì has obtained ISO 14001 certification for its environmental management system: assurance that the environmental aspects of its business are kept under control and comply with the law.

Can I use it on the hob?

Yes: the low pan goes both in the oven and on the hob. Avoid sudden temperature changes, though: never straight from hot to cold water or onto a wet surface.
