The tall terracotta pan is the pot for long, gentle cooking: it cooks naturally and keeps the original flavours of the ingredients intact. It is made to last — dishwasher safe, with lead-free glazes — and brings a timeless beauty to the table along with the dish.

It is made by Fratelli Colì in Cutrofiano, in the province of Lecce in Puglia, where terracotta and majolica have been crafted by hand since 1650: a tradition handed down from generation to generation, producing tableware and baking dishes known for their old-world charm, quality and durability.

⚠️ Important, first time only: before using it, soak the pan in water for 12 hours. This is what gives it a long life.

The first soak
Before the first use only: 12 hours in water.

No sudden temperature changes
Avoid thermal shock: don't set it down hot on a wet surface and don't put it under cold running water while hot.

Crazing is normal
Fine cracks in the glaze are typical of terracotta and do not affect its use.

After washing
It can go in the dishwasher. Let it dry upside down before putting it away.

Made to last

For its baking dishes the maker has chosen glazes free of heavy metals, so lead-free: this is what the «Long-life baking dishes» mark stands for. Ongoing research and technical updates improve their resistance to heat and reduce the absorption of odours.

The MAR (High-Resistance Majolica) mark guarantees greater resistance than ordinary ceramics: dishwasher safe, non-toxic and microwave safe. After 16-hour wash cycles at 78 degrees with harsh detergents there was no loss of shine; in impact tests it withstood drops from 90 cm, while ordinary ceramics broke at 65 cm.

Fratelli Colì has voluntarily obtained ISO 14001 certification for the environmental management of its activities.

Yes. The glazes have been tested through long wash cycles with harsh detergents without losing their shine.

How do I use it the first time?

Yes, and it is ideal for long, gentle cooking. Avoid sudden temperature changes, though: no going straight from cold to hot, or from hot to cold water.

The glaze has cracked: is it broken?
