Vinification: The Art of Creating Rosè Brut Sparkling Wine

The vinification of Rosè Brut Sparkling Wine from organic grapes is a meticulous process that begins with the first natural pressing of the grapes to obtain the must, known in Salento as LACRIMA. This must is then left to ferment at a controlled temperature in steel tanks. Subsequently, the sparkling wine is produced in an autoclave using the Martinotti method at a temperature of 15°/16°C for at least 5 months. This method preserves the fresh and delicate aromas of the grapes and results in a high-quality rosè brut sparkling wine, representative of the Puglian territory.

Masseria L'Astore Cutrofiano is an excellent winemaking reality located in the heart of Salento. We chose this company because their base wines are authentic expressions of the terroir and the grape varieties from which they are produced. L'Astore Masseria is a certified organic company that, in addition to wine, also produces an excellent extra virgin olive oil. Their commitment to quality and environmental respect is reflected in every bottle of rosè sparkling wine they produce, offering a range of high-end Puglian sparkling wines.

A History of Tradition and Innovation

The winemaking tradition of Masseria L'Astore dates back to the 1940s, a period when wine was produced in large quantities for sale "in cistern". However, in the late 1990s, an ambitious project aimed at the production of quality wines began. After thorough soil preparation, including geological analysis, excavations, crushing, and milling, about 20 hectares of vineyard were planted with cultivars such as Negroamaro, Aglianico, Primitivo, Montepulciano, Malvasia Bianca, and Susumaniello. The search for extinct native varieties led to new experimental plantings and a unique ampelographic collection in Salento, contributing to the production of artisan sparkling wine and high-value rosè brut sparkling wine.

The Cathedral of Wine: Tradition and Architecture

Next to the underground Oil Mill, a Cellar was built for wine aging, following the architectural tradition of Salento. With barrel and star vaults, using local materials such as Lecce stone and carparo, the cellar has been described by many visitors as a true "cathedral of wine". This fascinating place not only preserves the wines in optimal conditions but also represents the company's dedication to quality and tradition, producing rosato sparkling wine, moscato rosé sparkling wine, and rosè brut sparkling wine that reflect the essence of the Puglian territory.
