In Puglia, grape jam is a family recipe: a small secret that is kept and handed down, and that turns up on the breakfast table with bread and shortbread biscuits. This one is made with Apulian grapes only, from Negroamaro or Malvasia vines.

There is nothing else in the jar: no added sugar, no additives, no thickeners. The colour is amber, the taste stays slightly tart, and the sweetness is the fruit's own — just sweet enough.


Three names

Jam, marmalade or «mostarda»?

In Puglia people say grape marmalade, and everyone knows what they mean. Strictly speaking, though, it is a jam: European rules keep the word «marmalade» for products made with citrus fruit.

And then there is the third name, the one on the label: mostarda. It is called that precisely because there is no sugar in it — only grapes.

The real recipe for grape jam is a family treasure: in Puglia it is kept and handed down, and every household makes it its own way. This one follows the old Apulian recipe, the one people here simply call «grandmother's recipe».

The grapes are Apulian, from Negroamaro or Malvasia vines, and they go into the jar on their own: there is nothing else to add.
