Smoked scamorza is a fermented stretched-curd cheese with a soft, slightly salty texture, made with whole cow's milk only. It has the classic pear shape, with a short neck topped by a rounded “head”. The curd is set with rennet, a natural coagulant.

The final flavour depends on ageing: a short ageing gives a sweet taste, a medium one a medium flavour, and a longer one makes it piquant and intense. Smoking adds the characteristic aromatic note that sets it apart from the white version.

Caseificio Arcudi still uses the traditional production techniques of Puglia's cheeses — the same ones that have made these products loved and imitated all over the world.

Arcudi guarantees the complete supply chain and the exclusive use of milk from its own farm: from growing the feed, to producing the milk, to cheese-making. The raw milk comes straight from the Arcudi farm in Soleto (LE), in compliance with the requirements of Reg. (EC) 852/04.

❄️ How it travels. The scamorza is shipped in an insulated polystyrene box with cooling gel, which prevents cold loss and guarantees hygiene, not in a refrigerated truck: that is why we only ship fresh dairy in the cold season.

How is it different from white scamorza?

It is the same stretched-curd cheese: smoking adds the characteristic aromatic note that sets it apart from the white version.

It depends on ageing: a short one gives a sweet taste, a medium one a medium flavour, a longer one makes it piquant and intense.

What milk is it made with?

Only whole cow's milk from Caseificio Arcudi's own farm, which follows the whole chain: from the feed to the milk, through to cheese-making.

Is it eaten raw or cooked?

Both: it is excellent raw and melts beautifully when cooked, on pizza and bruschetta, in parmigiana, baked pasta and meat dishes.

Is it always exactly 500 g?

The stated weight is per piece and may vary by 20-30 g due to production requirements. Scamorza is sold from two pieces upwards, so one order brings you two 500 g pieces.

Can it be shipped abroad?
