Curiosity about semi-dried confit cherry tomatoes

Slow cooking at very low temperatures with only oil and sugar makes this product not only delicious but also very versatile. In France, it is a popular cooking method, designed to preserve different types of vegetables for a long time. It is no coincidence that in French ‘confire’ means to preserve. Just think that it was already practised in the Middle Ages!
