How we make our turnip green cream

We source the best turnip tops from Apulian farmers who grow these delicious typical regional vegetables in abundance in our region every winter. When the florets have reached the right point of ripeness, we work them one by one and transform them into a delicious cream ready to satisfy even the most demanding palates. From the first taste, we will accompany you on a journey to Puglia from which you will never want to return. To be enjoyed as an accompaniment to steamed blue fish or white meats, on bruschetta or as a simple but irresistible condiment for your Apulian first courses.

This turnip greens cream is also excellent for preparing pasta with turnip greens cream or rice with turnip greens cream.

What kind of pasta with turnip tops?

A type of pasta traditionally paired with turnip greens is orecchiette. This dish, known as "orecchiette with turnip greens," is typical of Apulian cuisine and involves the use of orecchiette, a short pasta that has the shape of small ears, perfect for holding the turnip greens-based sauce. However, other short pasta shapes such as fusilli or rigatoni can also be used for a similar dish.

How to use turnip green cream?

Turnip green cream can be used in various ways in the kitchen. Here are some ideas:

Pasta seasoning. Turnip green cream can be used as a sauce for pasta. Just cook the pasta al dente and mix it with the cream, adding a little extra virgin olive oil and, if you like, a sprinkling of chilli pepper and grated pecorino cheese.

Base for bruschetta. You can spread the turnip greens cream on slices of toasted bread to create tasty bruschetta. Add a drizzle of extra virgin olive oil and maybe some anchovies for an extra touch of flavor.

Filling for ravioli. Turnip green cream can be used as a filling for ravioli or other types of filled pasta. Mix it with ricotta or goat cheese for a creamier texture and balanced flavor.

Accompaniment for meat or fish. Turnip green cream can also serve as an accompanying sauce for meat or fish dishes. It is particularly delicious with white meats such as chicken or delicately flavored fish.

Pizza or focaccia. Add turnip green cream as a topping for pizza or focaccia, along with other ingredients such as mozzarella, sausage or olives.

These are just some of the many possibilities for using turnip greens cream in the kitchen!
