One of the undisputed symbols of Italian gastronomy is pasta, and fresh pasta is even more so. There is nothing more inviting, for an Italian, than finding himself in front of a nice plate of fresh homemade pasta, topped with a simple fresh tomato sauce or meat sauce.

Semolina orecchiette are a great Apulian classic that is often still prepared by hand according to tradition on Sundays. The flour used in Puglia is semolina, a durum wheat flour that is well suited to the preparation of homemade pasta. To make orecchiette at home you need a fair amount of skill and also a certain amount of patience, but the outcome is always superlative. Artisan pasta factory

The fresh homemade pasta that we offer here comes from the Salento pasta factory in the province of Lecce. In short, Apulian pasta, prepared by hand with selected local flours, we are talking about a small local pasta factory. No chemicals or GMOs, in full compliance with the principles of the short supply chain and the control of the raw materials, for a final product which is therefore not only tasty but also absolutely healthy.

Packaging of homemade orecchiette

The paste is prepared every seventh DNA and packaged in a protective atmosphere, ideal for transport. Once received, the product can be stored in the refrigerator at 4 degrees for approximately 30 days.

The protective atmosphere helps to extend the shelf life of the product while maintaining its sensorial properties unaltered. The nutritional virtues, appearance (size, volume, etc.) and flavor of the food remain unchanged compared to pre-packaging. The durability characteristics of the product in a protective atmosphere continue even after opening the package, these advantages must necessarily be connected to the premise of a fresh and qualitatively suitable basic product such as the pasta we have chosen.

The fresh pasta that you find on sale on this site is prepared with wheat from Puglia, durum wheat, barley and organic Senatore Cappelli quality: a wheat which by its nature is resistant to bad weather and attacks by pest insects, and therefore does not it needs chemistry to be brought to maturity. In short, the resulting flour, as well as being tasty, is also incredibly healthy, naturally organic and with a very low gluten content. Shipping & packaging of homemade orecchiette 

To guarantee the freshness of the product, shipments will be made based on product availability, this could lead to slight delays in processing the order of a maximum of 1/2 working days. The product will be placed in protected atmosphere food packaging, a type of vacuum that preserves the pasta in the most optimal way possible. It is not a vacuum that puts pressure and deforms the product.

Product availability and shipping

The pasta factory receives our orders between weekends, all orders received by Friday will be shipped the following Monday. Orders received over the weekend are shipped on Tuesday or Wednesday. The pasta factory is open on Sundays and closed on Mondays.
