Scattarisciati tomatoes are a traditional dish of Salento, in the heel of Puglia, handed down from generation to generation. The name comes from the local dialect: the tomatoes are cooked in a pan until they burst slightly, *scattarisciare*, and turn into a simple, flavourful sauce.

This jar brings them to your pantry ready to use, with peppers and onion, prepared following the old Salento recipe, without preservatives or additives. They are organic and Demeter-certified, made by the Le Lame farm in Cutrofiano, in the heart of Salento.

Who makes them

The Le Lame farm

The farm is based at Masseria Lo Tenente, dating from 1748, in the Lame district of Cutrofiano, in the province of Lecce. You can recognise it by its traditional architecture, with dry-stone walls, like the low walls that mark out the property and the areas inside it. It is a small masseria that still keeps an old neviera (snow store) and a threshing floor paved with chianche, the local stone slabs.

The vegetables for its preserves are grown on the farm's own land, picked by hand and processed in the farm's workshop on the same day.
