The Apulian orecchiette owe their name to the fact that they are shaped like an "ear", or small ears. This curious shape that still today the Apulian housewives shape every Sunday by hand with the help of just the thumb, peeps out on our tables in a very special version: the wheat flour version of the Senatore Cappelli variety. A rather ancient cultivar, for a long time fallen into disuse, but today rediscovered and widely appreciated even outside the region. The reason is obvious: it is a grain capable of giving life to a flour with great nutritional properties and a very low gluten content. In short, with these orecchiette and the right seasoning, you can also create a complete dish for the whole family, healthy, good, that tastes like home.
