The "Confit" cooking technique is a slow cooking in oil, salt, sugar and, sometimes, spices. It's a good way to preserve foods, not only vegetables but also fruit and meat. As a matter of fact, "confit" is a French word coming from the verb "confire", meaning "preserve".
This technique dates back to the Middle Ages and it's still very common in particular in the south-east of France.
