The preparation of Conserva Mara is long and laborious and requires time and patience. The process begins with the boiling of the chillies and tomatoes, which are then carefully transformed into a delicious puree of a beautiful deep red. But that's just the beginning.
In a second phase, the passata is dried in the sun so as to turn into a thick paté. Even today the people of Salento place it on sunny terraces, to favor rapid and natural drying. Finally, the Mara preserve is then mixed with extra virgin olive oil, little by little, in a process that requires at least seven days of patient waiting. Only when Conserva Mara reaches its point of perfection is it packaged in our special glass jars, ready to delight your palate. This authentic culinary treasure is a must in Salento cuisine. The long tomatoes are cultivated in open field in our farm
in the months of April and May and they are picked by hand
in July and August. Once picked, they are washed, selected,
cut by hand, salted and laid in the sun on desiccation frames
for 4-5 days.
Caciocavallo is an extraordinary mature cheese classic of south Italy and of Puglia in particular. This version is the "smoked" one, so tasty and flavoured.
Orange and a little sugar for this jam which is both pleasing to the eye and to the palate. It has an amber color and its acidic flavor does not provide the ideal solution for preserving the original rind, so much so that it appears rich in flavor and energy.
The "sponza frize" or in Italian the "bagna frize", is a bowl with a "platform" that half covers the top, useful for placing the frize after having wet them. The holes present allow the water to drain and then season it. The diameter is about 22cm.
