The preparation of Conserva Mara is long and laborious and requires time and patience. The process begins with the boiling of the chillies and tomatoes, which are then carefully transformed into a delicious puree of a beautiful deep red. But that's just the beginning.
In a second phase, the passata is dried in the sun so as to turn into a thick paté. Even today the people of Salento place it on sunny terraces, to favor rapid and natural drying. Finally, the Mara preserve is then mixed with extra virgin olive oil, little by little, in a process that requires at least seven days of patient waiting. The long tomatoes are cultivated in open field in our farm
in the months of April and May and they are picked by hand
in July and August. Once picked, they are washed, selected,
cut by hand, salted and laid in the sun on desiccation frames
for 4-5 days.
