In a second phase, the passata is dried in the sun so as to turn into a thick paté. Even today the people of Salento place it on sunny terraces, to favor rapid and natural drying. Finally, the Mara preserve is then mixed with extra virgin olive oil, little by little, in a process that requires at least seven days of patient waiting.
