In this pie we use hot peppers which are called “cornetti”. They
are cultivated in open field in the end of May and are picked
by hand from August to October. Once in our factory, they
are washed, selected, removed of their petiole, cut into rings
and let matured under salt for a short period. Then they are
triturated with the adding of some Mediterranean spices and
put in extra-fine-olive-oil.
It’s a must, an unfailing product in cuisine! It can be used in
slightly-fried onions, in a mussel sauté and for meat cooked
after the pizzaiola manner. Who loves hot and piquant can
try it on pizza or on pasta. The hot pepper of Salento is the top
of the whole local agricultural production. If it happen to find
yourselves in the city of Ruffano in late September, don’t lose
the occasion to visit the feast “te lu maru” (of the hot taste).

Una vera bomba!

Piccante, molto piccante! Ma non tanto da impedire di gustare il sapore dei peperoni. E non troppo olio. Equilibrato, direi. Nel suo genere, perfetto!

      eccezionali prodotti naturali salentini a casa tua

      prodotto fantastico da provare. personalmente da me gia' conosciuto, come altri fatti da voi, per essere stata presso la vs. azienda l'anno scorso durante le ferie estive in salento, che ormai si protraggono da 5 anni e anche quest'anno tornero' a trovarvi in quella fantastica terra !! ottima l'idea di vendere i prodotti su internet perche' tornando dalle ferie si puo' riportare quello che si puo'...!!! anche il servizio e' eccezionale : rapido e prodotti imballati e conservati perfettamente. grazie
