Known for its markedly sour flavor with a hint of acidity and for its size often straddling that of a pear and an apple, this fruit has a light golden skin. Its taste is the result of the union between malic acid and tannins: the former is responsible for the sour note, while the latter are the basis of the sour tone of quince. Fruit ripening usually takes place close to the end of summer and early autumn, in the months between September and October.
