Khorasan Saragolla flour
The variety of wheat from which this flour is obtained has the botanical name of Triticum Turanicum. Today it is a truly precious variety, as it has never undergone, over time, rearrangements or modifications or hybridizations. In short, by purchasing this type of flour you can be sure that you are buying a flour from a truly ancient grain. Its name, Khorasan, says a lot about its origin. It is, in fact, a cultivar of Iranian origin. It is part of the grass family and can reach considerable heights: even two meters! The grains are also very large, larger than those of other cultivars, in fact this grain is often also referred to as "giant grain". In general, Triticum Turanicum is a plant resistant both to drought and to attack by parasites, just as happens to Saragolla which, as mentioned, belongs to the same family. Today this plant is widely cultivated in America but especially in Canada. Not surprisingly, the name Kamut is a Canadian registered trademark. In those parts they have made a real business of it, given the high yield of the plant and the resistance to atmospheric agents and parasites, but we always advise you to orient yourself towards the local product, made in Italy and organic where possible
How to use Khorasan Saragolla flour
Saragolla flour is a durum wheat flour and its strength is around W240 so if you want to use it for bread making or making pizzas and focaccia, it does not need the help of another flour. It has a gluten content of 15% therefore it is not suitable for celiacs. It is rich in vitamin E, zinc, silicon, magnesium and potassium.
