Apulian artichokes are a local variety. They are not reproduced in nurseries but are propagated by taking plants from existing plantations. Cultivation begins in October, and harvesting starts in March, with the first artichokes being harvested with their entire stem. Processing, which occurs within eight hours of harvest, involves initial manual defoliation and cleaning, followed by jarring in extra virgin olive oil and sunflower oil.
